Oven-baked croquettes: an alternate method

Traditionally croquettes and bitterballen (cocktail croquettes) are deep-fried. Due to the many requests from customers for alternate ways of preparing croquettes, we have developed a croquette and cocktail croquette that you can now bake in the oven or in your hot-air fryer.

The recipe is still the same. The secret is in the crust. 

After numerous tests and crust formulations, combined with various baking processes, such as temperature and oven settings, we have come up with the right formula. The results are very positive.

We also discovered that oven-baked croquettes actually retained the natural flavors of the ingredients just as well as the deep-fried croquettes. As an added bonus, oven-baked croquettes are healthier than deep-fried croquettes. Plus, the croquettes can go into the oven, straight from your freezer. No need to thaw.

For those of you who prefer the traditional deep-fried method, nothing will change. Continue to use the method described in the previous article: “Recommended oils and methods for frying croquettes”.

Please follow these instructions to achieve the best results for oven-baked croquettes (kroketten) and coctail croquettes (bitterballen):

  1. Carefully remove the croquettes from the package using a pair of scissors or a small sharp knife.
  2. Spray the croquette evenly with PAM (or other brand) spray.
  3. Oven should be pre-heated and setting should be on “Broil”.
  4. Place the frozen croquettes on a baking sheet on the top rack in the oven.
  5. Make sure to rotate the croquettes every 5-7 minutes, so they bake evenly on all sides.
  6. Broil for about 20 minutes.
